About
El Encanto is a family-led project rooted in generations of coffee production. Through a deliberate renovation of their farm, the family shifted from traditional varieties to rare and expressive cultivars such as Gesha, Java, Ethiopian, Bourbon Ají, Caturra Chiroso, and Pink Bourbon — not selected for yield, but for their ability to communicate terroir and sensory depth. At El Encanto, coffee is treated as a creative language, where fermentation becomes a tool to highlight elegance rather than dominance.
Processing
This coffee was developed through a controlled and intentional natural process, calibrated to preserve florals, clarity, and aromatic finesse:
- Selection of fully ripe cherries,
- Controlled oxidation phase to activate aromatic precursors,
- Advanced natural fermentation under monitored conditions,
- Gentle drying to protect volatile floral compounds,
- Stabilization period to allow moisture equilibrium and aromatic integration.
Each step was designed to amplify elegance rather than fermentation intensity.
