Guided by heritage and a deep passion for quality, the Gasca family has built a project grounded in innovation, traceability, and sustainability.<\/p>\n<p>The name \u201cZarza\u201d, linked to the family surname Gasca, symbolizes unity and an unwavering commitment to excellence. Beyond coffee production, the family integrates beekeeping as part of their agricultural ecosystem, strengthening biodiversity and adding value to their land.<br \/>\nSince its founding in 2022, Zarza Coffee has refined every stage of production\u2014from selective picking to fermentation and oxidation management. Their mission is to share their coffee and family legacy with the world, ensuring that every cup reflects passion, elegance, and dedication to high-quality Colombian coffee.<\/p>\n<p><strong>Varietal<\/strong><\/p>\n<p>Bourbon Aji &#8211;\u00a0Recently discovered in the south of Huila, this unique variety surprises many: despite its name, genetic testing confirms it\u2019s not a Bourbon mutation, but an Ethiopian landrace like Geisha and Pink Bourbon. It earned the nickname \u201cBourbon Aji\u201d because its mucilage gives off a subtle peppery aroma and flavour, reminiscent of red pepper ( aj\u00ed ).<\/p>\n<p>Like Geisha and Pink Bourbon this varietal tends to score highly on cupping tables with desirable flavours such as jasmine, blackberry and\u00a0good sweetness.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Processing<\/strong><\/p>\n<p>This is labelled as &#8220;advanced natural&#8221;. What does that mean? There&#8217;s multiple stages to this coffee&#8217;s processing which we outline below.<\/p>\n<p>Step 1 \u2013 Selective Harvesting<br \/>\nHandpicking of only fully ripe cherries to guarantee sweetness, uniformity, and high-quality raw material.<\/p>\n<p>Step 2 \u2013 Pre-Fermentation Oxidation<br \/>\nCherries undergo 24 hours of controlled oxidation in cherry. This stage initiates microbial activity that adds depth, fruit brightness, and early aromatic development.<\/p>\n<p>Step 3 \u2013 Anaerobic Fermentation in Cherry<br \/>\nThe whole cherries are placed into sealed tanks for 60 hours of anaerobic fermentation. This oxygen-free environment enhances the deeper berry, blackberry, and jasmine characteristics typical of Bourbon Aj\u00ed.<\/p>\n<p>Step 4 \u2013 Bag Fermentation (Second Anaerobic Stage)<br \/>\nDepulping is not performed. Instead, the whole cherries are transferred into sealed fermentation bags for an additional 60 hours of controlled fermentation, reinforcing fruit density and floral expression.<\/p>\n<p>Step 5 \u2013 Thermal Shock Application<br \/>\nA carefully controlled thermal shock stabilizes the fermentation process and helps \u201clock in\u201d aromatic compounds responsible for the honey-like sweetness and floral complexity.<\/p>\n<p>Step 6 \u2013 Sun Drying in Marquesinas<br \/>\nCherries are dried on raised marquesina beds for 12\u201315 days. This note comes increasingly to the front as it cools.\u00a0Alternatively, you can get more sweetness, banana, a rich chocolate and cherry liquor\u00a0with immersion brewer like the Pulsar or Aeropress.<\/p>\n<p>On espresso a faster shot is recommended since it&#8217;s quite soluble. under 20 seconds 19g in, 40 out is a good starting point.<\/p>\n<p>For best results we recommend purchasing whole bean and grinding fresh before brewing. If you don&#8217;t have a grinder, we can grind to your preferred brewing method prior to shipping.<\/p>\n<p>SHIPPING &amp; DISPATCH:<\/p>\n<p>We roast Tuesday to Thursday.
